In 2017, Barry Callebaut unveiled “ruby chocolate,” which gets its natural pink hue from a special type of cocoa bean. Wolfgang Puck Catering is the first company in the United States to work with this new varietal and will be unveiling it in the form of Ruby Chocolate Strawberry and Cream.
