Almost a year after debuting Volume I of Ruby Encyclopedia, a guide to everything chefs need to know about Ruby chocolate, Chocolate Academy North America has released the highly anticipated Volume II of Ruby Encyclopedia. Compared to Volume I, which focuses on confections, baking goods, and desserts, the new volume covers ice cream and beverages that utilize the popular Ruby chocolate.
